Coconut Cupcake Attack!!


Today I asked myself...



How many cupcake pictures are TOO many cupcake pictures??



Today I took 100 pictures of my coconut cupcakes... at 8:30 am... and on the balcony... YES, I'm going mental!!




Of course, the whole morning was already a bit weird... I woke up at 7 to have breakfast with my fiancé (who left inmediately for work) and then... I baked 11 coconut cupcakes!!!

Whatever...


I'm not going to post all the pictures...
I'm sure that Blogger would delete my blog! haha.
So I'll select... some!





Oops!! yes!!! the recipe!!!

I found this recipe fromJoy of Baking and then I simplified it for two reasons:
  • It was 7 am and I was too sleepy and tired to follow the instructions.
  • I didn't have lemon zest (as always) and I have NO CLUE of what "Tartar" is... (sorry... I'm new to cupcake baking!!)
I also added coconut flakes to the dough...

So my (simplified) recipe is the following:
  • 2 eggs
  • 175 gr. flour
  • 2 tsp baking powder
  • 115 gr. butter
  • 200 gr. sugar
  • 1 tbsp vainilla sugar
  • 120 ml milk
  • 60 gr coconut flakes
So I basically mixed everything at the same time with my mixer (It was 7 am!!! I couldn't think clearly! haha) and filled my cupcake cases... baked them for 20 mins at 180º...



And... they were SUCCESSFUL!!!!




For the icing, I used 150gr philadelphia cheese, 75 gr. butter and around 300 gr. icing sugar (I just added more and more until I reached the perfect texture):


Then I used my piping bag to decorate the cupcakes...




And coconut flakes...



White is boring!!!! So... I added some colour!




















I then put 6 in a box, for my fiancé and his mate Alex (who plan to play PlayStation 3 for hours this evening) and 4 in another box, for my friend Melissa (who will be saving me from the PlayStation 3 session!! haha).

And yes, I said that I baked 11 cupcakes... what happened to the last one???



I ate it!!! haha.... but I have a good excuse: I had to make sure the taste was right...



And I can say... it was AMAZING!!!!!!!!!!!!!!!!!!! YUM!!!!!!!!!!!!





Well... I can say... these were TOO many cupcake pictures!
I'll control myself the next time!! haha
