¡¡¡PROHIBIDME COMPRAR MANTEQUILLA DE CACAHUETE!!!
He vuelto a las andadas y estoy ingiriendo muuuuuuucha mantequilla de cacahuete en todas sus formas: untada, en chocolatinas, en polvo... ¡¡¡hasta en forma de muffins!!!
El tema es que cuando me quedé embarazada dejó de apetecerme. Sí. A mí. Increíble pero cierto. Me pasé el primer trimestre sin ni siquiera olerla... El segundo y tercer trimestre algo probé, pero con moderación...
La cuestión es que después del parto la he cogido con ganas... Encima a la tienda nos ha llegado un cargamento de productos Reese's... ¡¡os podéis imaginar!!
En este caso hice unos muffins DESCOMUNALES de chocolate con mantequilla de cacahuete.
Como impulsor he usado de nuevo las Gaseosas el Tigre. Ya sabéis que las estoy usando mucho recientemente.
Las hemos traído a la tienda y la verdad es que las masas quedan súper esponjosas, así que estoy experimentando con ellas un montón.
Os recomiendo que las probéis (las podéis comprar en nuestra tienda online o en su página web tenéis además un listado de todos los puntos físicos donde las venden).
Si aún así no las encontráis podéis usar en su lugar 1 cucharadita de levadura química + 1 cucharadita de bicarbonato.
Vamos allá.
MUFFINS DE CHOCOLATE CON MANTEQUILLA DE CACAHUETE
Receta de Alma Obregón para 12 muffins.
130g de mantequilla (yo uso siempre Kerrygold)
160g de chocolate negro troceado
3 huevos camperos
100g de azúcar moreno de caña integral (panela)
50g de azúcar blanco
300g de harina
2 sobres dobles de Gaseosas el Tigre
180ml de nata de cocinar (18% mg)
Dos puñados de chips de mantequilla de cacahuete Reese's
12 cucharaditas de mantequilla de cacahuete
Comenzamos preparando la bandeja con 12 cápsulas para muffins (podéis comprar las mías aquí). Precalentamos el horno a 185º con calor arriba y abajo (175 si usamos ventilador).
Derretimos la mantequilla con el chocolate negro con cuidado de que no se queme (podéis hacerlo al baño maría, al microondas, o a fuego muy bajo). Retiramos del fuego y añadimos los dos tipos de azúcar y los huevos. Mezclamos hasta lograr una masa homogénea.
Tamizamos la harina con las gaseosas el Tigre e incorporamos la mitad a la masa previa. Removemos muy bien. Incorporamos la nata de cocinar y mezclamos de nuevo. Finalmente añadimos el resto de la harina. Cuando la masa es homogénea añadimos los chips.
Repartimos la masa entre las 12 cápsulas (el molde estará lleno hasta arriba casi). Colocamos una cucharadita de mantequilla de cacahuete en cada cápsula, sobre la masa, y mezclamos con un palillo para crear un remolino.
Horneamos 22-25 minutos o hasta que al pinchar con un palillo salga limpio.
Dejamos enfriar sobre una rejilla e ingerimos sin piedad.
